Creamy Dill Dip (raw)
1+ cup sunflower seeds (soaked and drained)
1/3 cup fresh lemon juice
1/2 t. sea salt
several sprigs of fresh dill weed
1 thin slice sweet onion
water as needed
In a high-speed blender, blend the soaked sunflower seeds with all of the ingredients except the dill weed. Add water as necessary. When the dip is of the desired consistency, add in the fresh dill weed and lightly buzz the ingredients to mix the dill and put flecks of green color throughout. The dip chilled will be thicker and flavors will blend better, but a fresh dip is a delight too.
